洗干净锅,[link widoczny dla zalogowanych],再起油锅,油热后加盐,加辣椒洋葱开炒。炒一两分钟辣椒亮亮的,倒入刚才炒好的牛肉丝,开始下糖、酱油、半小碗水。翻炒几下,这时洋葱有点酱油色,汤也不多了。开始钩芡。打小半碗冷水,放点生粉,搅匀,倒进菜锅,这时菜汤跟石灰水似的。翻炒几下,很快就稠了。关火。要加味精的就加点味精,出锅装盆。
昨天终于做出与食堂色香味接近的牛肉丝了!
青辣椒洗净,切去两头,去籽,切丝。洋葱切丝。
沃尔玛买牛柳、青辣椒、洋葱。

先炒牛肉丝。起油锅,油不用多,[link widoczny dla zalogowanych]。油热后下牛肉丝,翻炒几下,等肉丝变色成形,再翻炒10秒钟,关火。下牛肉丝开始算总时间肯定不超过30秒,要不然肉丝就老了咬不动了。
味道甜甜的,确实跟食堂大师傅做的有点接近了!老婆说:好吃死了
牛柳横向切丝,因为把纤维切断吃起来方便,[link widoczny dla zalogowanych]。切大约小碗半碗,倒入料酒、酱油、红酱油、少量生粉,拌匀,静置10分钟左右。生酱油是加入调味的,但是颜色太淡,所以还要加些红酱油,这样颜色红红的更像店里的。生粉不加肉丝容易老。
